Beer Can Chicken

My husband is a good chef and one of his distinct dish is cooking beer can chicken.  We bought the beer can holder for just $1 from somewhere and ever since then, I was longing for this beer can chicken.  This is our 2nd time making it.  We cooked with a can of beer at the 1st place but this time we used a can of Coca-Coke to cook instead 'coz all beers were gone.  Well, the sauce tasted a bit sweet this time that's all.  I guess it works well as long as you cook the chicken with soda.

 Marinate the bird with sauce for over night.  In this case here, my husband has marinated the chicken with BBQ sauce for 3-4 days (we didn't have time to cook that's why).  Open the beer/pop, drink 1/3 of it, and place it in the beer can holder, then sit the bird on top of it.  Since we don't have a grill, we just threw it into the 420F preheated oven for an hour.

 Take it out after an hour, then brush the chicken surface with whatever juice that's left on the foil.  You might want to cover up the top part of the bird with foil just to avoid any burnt.  Some people like to put an onion or an apple at the top to keep the chicken moist, but it's just up to you.

Once done (usually takes 90 minutes to cook the bird, but depends on it's size of course), remove the chicken from the stand and let it sit for a while.  Meanwhile, drain the juice from the foil to a saucepan and cook it with the remaining beer/pop that's still in the can.  Cook until the sauce is thick, or use some cornstarch to thicken the sauce.  Serve hot.

Chicken is sooooooo moist and tasty!!  It's your option to eat with or without the sauce, and this is yummy to eat with rice too!  My husband was so into computer and he forgot about the bird, so it was a bit burnt as you can see.  However, no matter how burnt or overcook the bird is, the meat will still remain most!!  Never fail!  =)
