Morning Glory Muffin

It has become my Mom's new habit now that she makes all kinds of goodies during the weekend, and have me post them on my blog!!  LOL!!  Well...part of the reason is because Mom loves cooking of course, and the other reason is that I'm running out of blog topics!  Hahahah!!  Anyway, here is her homemade morning glory muffins.  I used to love eating this muffin alot 'coz its moist, rich in flavor and healthy. 


Ingredients:

    2 cups all-purpose flour                   2 tbsps baking soda                         2 tbps ground cinnamon
    1/2 tsp salt                                       1 1/4 cup granulated sugar              1 1/2 cups grated carrots
    2 apple, peeled, cored & grated      3/4 cup sweetened flake coconut    1/2 cup raisins
    1/2 cup chopped pecans                 1 cup vegetable oil                           3 large eggs
    1/2 tsp vanilla extract. 

 In a large bowl combine flour, baking soda, cinnamon and salt. Stir in sugar.

Mix well.

Combine oil, egg and vanilla in a bowl.

Combine the flour and egg mixture together.

Here is the grated apple, carrot, coconut, raisin & pecans.

Mix well.

Add the carrot mixture into the batter.

Slightly mix them together.

Spoon the batter....

...into a greased muffin tin, about three-fourths full.

Done!

Preheat oven to 375°F

Bake in the oven for 18-20 minute, or until golden brown.

To test if its cooked or not, poke a toothpick into the muffin and pull it out.  If there is nothing stick on it, it' done. Cool on a wire rack afterwards.

Closer shot.  My comment:  a bit too dry this time, needs to rest it for a night to let the moist settle.  Should taste better if more cinnamon flavor is added.

  1. The muffins look good to me, but the pecans look more like almomd in color and shape than pecans.

  2. May be there are a few pcs of pecans chopped in halves but almond is not in the ingredients.

    1. Excellent observation! Sorry I used almond instead of pecans this time and I put both ground flaxseed and wheat germ in there as well. That’s why it’s a bit dry. I don't mind at all, as long as it's healthy.

  4. Mom, 請問有冇 English tea buscuit 食譜? 曾經去過 Red Lobster 食過佢地嘅 buscuit 好香牛油味, 但 Tim Hortons 嘅 buscuit 冇咁香, 想自己試吓整. 唔該哂.
