Korean Stir Fried Noodles 韓式雜錦菜

Korean stir fried noodle is actually a very easy-to-make dish.  I always see these cooked noodle packages for sale in Korean supermarkets but they don't usually have a lot of ingredients in it, just purely seasoned noodle in most cases.  There is no fixed ingredients for this noodle and you can mix whatever you like inside, and because of this, there is no recipe for it.  I guess the most challenging part is getting the noodle prepared before mixing all ingredients in that's it. 

Korean stir fried noodles, it's not too hard to make afterall.

Soak the Korean noodle in cold water for about half an hour to get it soft first.

Drain it.

If you don't have time to soak it, just put it into the hot boiling water directly.

Once it's soft, drain it again.  Its suggested that you rinse the noodle with icy cold water to prevent further cooking.


Cut the noodle into an eatable length.

Season it with lots of sesame oil and soya sauce first.  Mix well.

Add whatever ingredient you prefer.  Here I have fresh mushrooms.

Spinach.  Boil the spinach in hot water first, then drain it and squeeze out all the water, and cut it into
one inch in length.

Here are other ingredients my Mom used: dried mushroom, carrot & 'cloud ear' fungus.  Cut/shred it into small pieces and stir fry all these ingredients first (season them with salt, sugar, black pepper will do).

Here are two more ingredients: egg and onion.  Stir fry the onion as well.

Place the spinach on the seasoned Korean noodle, like this.

Stir fry the carrot and put them into the bowl as well.

Then add the stir fried onions.

Stir fry all these mushroom first.

...Then put everything into the noodle container.  (Remember to use a large bowl!)

Done!!  I didn't know Mom puts that many ingredients into the bowl 'till she has finished.

Mix them well.  No need to cook 'coz everything inside this bowl is already cooked.

Done!!  Serve as is.

    1. 嗰道有間泰國菜館我嘟唔知...好少去嗰邊食。嗰間越南菜館(喺潮州館隔離)反而有去過,碟頭細啲但味道嘟ok嘅。

    5. Yup its right across the 灣景茶餐 plaza. It's in the plaza with HSBC bank, 潮州館, wal-mart, Metro, Timothy's...

      Oh actually 潮州館 is not bad too! 川椒雞, 炸豆腐粒, "老"水鴨, 沙爹牛肉炒芥闌...(it's somewhere next to Thai Basil.)

  2. 以前試過整呢樣韓國 chap chae 失敗咗, 原來啲粉係用撈嘅方法, 我浸完用油去炒加配料, 點知整完出嚟一 pat pat. 又多謝伯母提點.

  4. I thought it's your own creation at the very beginning unitl I read along and found out it's mom's. I make this once awhile as well with similar ingredients, the good thing is you can add whatever you like to suit your taste buds. There is quite a bit of milage on the chopping board. lol

    1. Ahh these noodles reminds me I haven't eaten at this japanese place for a long time. Looks good! I may try to make your recipe one day mom. But when I have time to do lots of chopping.

      What does the package of Korean noodles look like? There are so many kinds of Korean noodles I see in the supermarket.
