April 29 (Friday) - Dinner at Fancy Cuisine 利嘉盛

Dear Uncle Hong,

Uncle Hong, this post is specially dedicated to you~~  ^^

I was really happy to have dinner with your mom last night.  We went to 利嘉盛 and ordered 四和菜! We ordered a steam 青班, 苦瓜白飯魚煎蛋, something like a 清遠雞 and 魚湯紀子浸白菜苗.  It's such a pity that you were not here, if not I'm sure you would be enjoyed as much as I did!!

We didn't wait long and the soup came. It was the 豬骨煲粉葛 and it tasted really good!!  The flavor was there and honestly, I didn't drink such kind of good soup for a looong time!!  The only complain part was that the 粉葛 was 太老,有渣 and 鞋口.


The food came really fast, I was still in my first bowl of soup and the first dish 清遠雞 came with the 薑蔥茸.  Looks good huh!  It would be nice if they can up size the serving portion to 1/3 more!  HAAHHA!!

魚湯紀子浸白菜苗 came next.  The 魚湯 was really flavoured and the 紀子 was really sweet!  I never thought the 紀子 can be that sweet!!  You can actually drink the 魚湯 or use it to 送飯.  The 白菜苗 itself however, was nothing really special.

Next came the 苦瓜白飯魚煎蛋.  They didn't use a lot of 苦瓜 in this dish, so I didn't really taste a lot of 苦瓜. The 白飯魚 mixed with the egg was awesome though.  It came with a small dish of fish sauce as a dipping sauce. Not bad not bad.

Then the 蒸青班 came.  The waiter boned-out the 青班 for us, which I know there aren't a lot of restaurant do that nowadays.  The 青班 was very 彈牙 and you can taste the freshness of the fish.  Steaming time was just perfect.  The only drawback of this dish is that the fish has a little bit of the 泥味.  (PS, didn't have a chance to take the 正面 of the fish.)

Last but not least - dessert.  The waitress gave me 3 dessert choices to choose from at first: 豆腐花,紅豆沙 and 渣渣.  I asked if they could do 紅白 and they said yes, then the waitress went into the kitchen and came out, telling me the 豆腐花師父 is not yet in... So they don't have 豆腐花 at that point, so I chose 紅豆沙 at last.  Their 紅豆沙 has a really strong 陳皮味 which is really good.

We went to your home to check out your car after dinner, just wanted to make sure your car can start and run smoothly.


It's Spring now although the weather is still a bit chill.  Flower near your house started to bloom.

We started your car and did several test runs around your neighbourhood.  Guess what!  There were whole bunch of earth worms hide under your wheel!!  Here is a big fat one, wa........!!

Another 'not really big' one hiding underneath your rear right wheel, and you know what, we've actually smashed several worms while driving out from your driveway.

Absolute World - Mississauga, ON

Absolute World is one of the most stunning residential condominuim in Mississauga.  It is estimated to be completed in August 2011.  I take picture of this condo everytime I go to Mississauga.

Flower Shrimp

I went to Mississauga today to get my new aquatic pet at Big Al's aquarium - Flower Shrimp!  Woo-hoo!  This is my first time keeping flower shrimp and I hope they are not too difficult to keep.  I want to put them in my guppy fry tank but I'm afraid this shrimp is gonna kill my fry!


Look at their claws, they are fan shape and designed to catch microorganisms.


I got two of them.  This is another one.

Niagara On The Lake

Niagara on the Lake is a very pleasant town for retirement and tourism.  Their downtown district is nice and it worths spending an afternoon there with your family.






Their downtown district is very close to the beach - only walking distance.  This apartment building is built right next to the lake, which you can have a stunning view of the Ontario Lake.


...and I took the realtor's info!  LOL!



You can see Toronto and the CN Tower from across the lake if the weather is good!





Last but not least, the Vinyard!

'Perfect Weather'

From time to time I like taking picture of clouds - only if I have my camera with me..

I was taking picture of this cloud (seems nothing special...) at my balcony one afternoon when I noticed that...

A crazy thunderstorm was coming from the west!  Gosh, you can see how heavy the rain pour at the left side of the picture.  This storm arrived in 15 secs right after I took this picture and I didn't take the picture while this storm was passing by 'coz I didn't dare to open my balcony door.  Rain + ice pellets, it was chaotic.


Thunderstorm gone in less than 60 seconds!  They're going to the east now!

Blue sky, white clouds again right after the storm!  That's fast and furious!

Sunset - I didn't take the picture of the sun but instead I took the picture of these small houses here.

April 17, 2011 - who would think the weather would be that ugly and nasty during mid Spring?!  I woke up in the morning and saw the snow outside - what a thrill!

The snow didn't last very long as you can see the cloud was leaving and the blue sky was emerging.

Taking pictures at night with my camera

I have a Sony digital camera which I have been using it for over 5 years.  I'm not sure about it's model, I just know it has a 3" touch screen..  I'm those kind of people who hate reading manuals and because of this, I will have to play around with my camera and 'discover' their features.  One of the feature that I'm still trying to learn is how to take pictures at night.  My camera is set to the auto mode and because of this, there must be something that I'm missing - 99% of my pictures taken at night are buried!  Below are the 3 successful one - sort of...but I've forgotten which mode I've set my camera at...

Canton Wonton 廣東雲吞

I didn't make Canton Wonton for a long time because I can't make it taste like my mom's and I don't know how she makes it (even through she has taught me about the seasoning).  I just know how to wrap it and cook it!  This looks very similar to Mom's product but it still taste different.  I wondered when I can learn her technique.  One thing she has taught me, is that you need to add a lot of sesame oil into the mixture...maybe I should try that next time!

1, Dice some bunches of green onions (I've used 6 bunches here)

2, Prepare the shrimps.  It's recommend that you cut each shrimp in half, just for easy wrapping.  (I've used 2 pounds of shrimp here)

3, You'll need some minced pork too, about 1 pound.  Add the diced green union, shrimp and pork together + 1 egg as well.  For seasoning, I've added soya sauce, white pepper powder, some Chinese cooking wine (optional), oyster sauce and lots of sesame oil.

4, Mix well and set in the fridge for 4-5 hours or over night.  You need to chill your mixture a bit so that it's easier to wrap.


5, Wrapped wonton, ready to go into the boiling water.

6, Once the water boils, put a few wonton into the cooking pot and stir them a bit so that the skin won't stick to the bottom of the pot.  Also, i.) DO NOT close the lid; ii.) DO NOT put any seasoning into the water.  Cook for another 1-2 minutes once the wonton is floating like the above picture.

7, In a separate bowl, put some seasoning in it and add some hot water to form a soup base.  The seasoning I usually put is some chicken stock powder (don't know how it's call), Maggie sauce and a little hint of sesame oil.
